One of the most common reasons employers cancel interviews is because they have a work-related scheduling conflict. Urgent meetings, double-booked appointments and other issues can require interviewers to rearrange their interviewing schedule.

If they’ve had someone accept the job offer, it’d be a waste of everyone’s time to postpone, and they would cancel. If they had an offer out to a potential, still would make more sense to keep the interview on time, as rescheduling generally doesn’t look good (and the times I’ve been rescheduled on, the interviewer has apologised).

That is a thing that happens — some employers will not bother interviewing people who don’t make it really easy to schedule an interview, meaning that if you turn down the first offered date, you may not hear from them again. To be clear, for most jobs that’s really poor practice.
